| 摘 要： | 根据工业企业系统管理的基本原则和递阶层次结构理论，建立了罐头食品质量管理的ＨＡＣ－ＣＰ（危害分析及关键控制点）系统结构模型，初步总结出对该系统进行操作的主要步骤及其应用成果，提出了进一步研究和应用ＨＡＣＣＰ系统的建议。

| Abstract: | According to the basic principles of industrial business manageinent and the theory of step-to-Step tructure, the structural model of HACCP(hazard analysis and critical control point) system in the quality management of the canned foods is built,the main steps and achievements in applying the system are initially summarized,and some suggestions are proposed for the research and application of the HACCP system. |
